If you tuned in for Friday’s Off The Grid Podcast I was getting ready for a hurricane. I off grid rocket stovecelebrated the storm by cast iron cooking out on the rocket stove with a new recipe.. Cowboy Pizza!! We were supposed to get 6 – 12 inches of rain along with some strong wind. Keep in mind that all of this was in addition to the 7 straight days of rain that this area just soaked up so the ground was all set for some trees to fall down. Nothing really happened though. As always it best to be prepared and this turned out to be a very good exercise in prepping. Over the last year I really thinned my belongings down a lot and this included food storage as well. Timing for this weekend worked out really well for making good use of the time indoors and out on the rocket stove for viddles! lol πŸ™‚

Friday night I got in really late after picking up a bag of ice for the off grid refrigeratorcowboy pizza jalapenos because I still have no power here in the camper. It was raining.. SCRATCH that.. it was pouring cats and dogs! I did my best but still got soaked by the time I got off grid to the camper. Saturday proved to be pretty mild compared to what the weather man was calling for. Most of the day was spent inside the camper cleaning up, sorting stuff, rearranging, and going through a cool box of food my brother brought out the weekend before (it rained the whole weekend too). Mid afternoon I decided to venture out to the grocery store for cooking out on the rocket stove grill with a new recipe I wanted to try called Cowboy Pizza. I fired up the rocket stove, grabbed a cast iron skillet, and started cast iron coking here off the grid. Yup. I celebrated the storm by having my very own hurricane party all by my self! lol With the smell of wood smoke surfing on the wind I began to relax. I know I mention the rocket stove a lot but I love cooking out on it. When you cook a Cowboy Pizza with a good old cast iron skillet then your truly cast iron cooking! πŸ™‚ Do you have a mouth watering recipy I could try out here on the grill? As the title suggests today’s podcast is ushering in the new season of fall with a seasoning cast iron skilletsmajor show update in number of weekly episodes for Off The Grid Podcast along with some new additions yet to come. I started recording episodes back in February documenting my journey from living an average suburban lifestyle to here in a little camper off the grid. If you have been following the show these episodes have been posted 5 days a week for about the last 3 months. Now that podcast episodes are pretty much up to date its time for fun projects to begin right in line withe the start of fall weather. The edge of summer heat just gave way no long ago and for the first time this year I was able to enjoy an entire weekend here off the grid.

My brother and I had been planing to get together and he was wanting to check out the off grid camper. My brother and I hung out this weekend catching up on old chopping away stumptimes, cooked out on the rocket stove, built a good fire, and seasoned a lot of cast iron cookware. Despite having rained all weekend we made the best of it and just enjoyed the down time away from it all. It literally rained all day Friday, all day Saturday, and eased up on Sunday as he sunshine finally wrestled free from the clouds. We put up a good sized canopy tent shielding us from the rain making for a cool place to hangout. Building a nice campfire while enjoying the sights & smells of wood smoke was a relaxing bonus to combat the rainy day. Once the fire got going we added all of the cast iron cookware. Cooking with cast iron is always good and once in a while they need to be re-seasoned. Swapping out a cast iron skillet, dutch oven, and cast iron pan over several hours enjoying the smell of good campfire was really nice as the sun went down. Sunday the sun managed to start winning the battle with the clouds above as my brother headed out. brewing beer fermentationHopefully he had a great time here off the grid!

After my brother headed out I got to working on the fermentation of my new “Off Grid” brew. (Spoiler Alert) ~ Last week I recorded an episode on brewing beer. The brewing beer Episode will be posted very soon. As the sun went down and the Super Moon graced the night sky I get everything out for the second half of fermenting my batch of chocolate peanut butter off grid beer. This is indeed a very special batch of beer because not only is it the first beer I have brewed off the grid (on a rocket stove by the way) but it is also being made during a very rare celestial event. The second fermentation of this brewing process was done during a lunar eclipse blood moon. Will it make a difference brewing beer during a full moon? I honestly don’t brewing beer fermentation 2know but one thing is for sure this is going to be a very special Off Grid Brew no matter what! Speaking of which.. if any of you listening have a good idea or few I am asking for your help to name this special batch of Off Grid beer. It is being made with chocolate, peanut butter, caramel, and vanilla bean extracts so the flavor profile should be quite interesting to say the least! Do you have a cool or unusual idea to help me come up with a name for this brew? Please post in here in today’s episode with your ideas πŸ™‚

Yes I like to do a lot of cool stuff here off the grid and learning to be more self sufficient in having the ability to garden, preserve your own food, make your own deodorant, soap, hunt, and learning new skills is always a plus. Invest in yourself. You can’t go wrong learning new “old skills” because you are investing in yourself. It will always pay benefits when you learn to do something new for yourself.. and others as well. Everybody stay safe and enjoy the ride! πŸ™‚

Today or um tonight’s episode was recorded late one evening about 11 o’clock off the grid while cooking with a cast iron Dutch Oven on the grill. I was a little tired so if my energy was low that was why. The days here in the camper have been flying by really fast and fall is on the way. With the fire going on my off grid grill (rocket stove) I put a small 12 inch grate over the top so I could use my Dutch Oven to cook dinner. Tonight’s cast iron cooking menu featured smoked sausage Jumbolia with fresh peppers, onions, raw honey, and yummy spices! If you have been following the Off Grid Podcast you know that I love to cook. Once I get the power issue straight I will be cooking a lot more so if you have a good recipe to share I would love to try it! You can check out something new on the Cast Iron Cooking page. As I enjoyed the refreshing night air with the scent of wood smoking on the rocket stove grill I stopped from time to time to admire the heavens above. Because this is off the grid in mother natures back yard I also paused from time to time to listen to all the wild insects and animals teaming in the surrounding forest. Reflecting back on the last few days I have not been getting much done recently in the off grid camper but tonight I was going to eat good! Earlier in the night a very small and very cute baby owl flew right over my car as I was pulling up landing on a branch just long enough to say hello. πŸ™‚ Tonight’s episode was recorded back in mid August. Podcast shows should be up to date withing about a month.. just in time for the cooler weather lol. This means more cast iron cooking outside!! Whoo hoo!! πŸ™‚

A fitting good end to the crazy week takes me out hunting for deals at the flea markets and this weekends major score was great for cast iron cooking! πŸ™‚ This weekend I found a LOT of very cool cast iron mini skillets, heart shaped cookie mold, a ginger bread man cornbread mold, and a unusually odd 4 in 1 cast iron pan with a hinged lid. If your curious then click on today’s featured image of the collection of cast iron cookware. The picture will enlarge for a better view. We all know the coveted WagnerΒ  cast iron skillets but if you can not find what your looking for or can’t afford the higher antique price tag then save money at your local flea markets and yard sales. I did find a lot of smaller useful finds that will definitely come in handy here in the off grid camper. I found a super small garden hose water pump that you pewer with a drill, some aluminum flashing, and a few other little gems for off grid projects. If you like cooking with cast iron you know that they can last a lifetime. You also know that depending on what you buy you can spend a bit of money on your quality cast iron collection. Save some money and look for some local deals in your area!

pull up camper carpetThis has been a very good yet busy week and the weekend tuned out to be no different. If you have been following Off The Grid Podcast you know this year has been flying by fast! Episodes are being posted at a super fast pace to get caught up with current recorded shows (today ;). After checking out some of the local big box stores as well as discount outlets in my search for flooring I decided to look online. Craigslist turned out to be where I found what i was looking for. More progress is being made on the floor. I pulled up the ancient carpet making room for the new flooring in the off grid camper. There was a deal for some almost brand new flooring (floating floor) for only $50 so at that price I was saving a lot of money. Most of the flooring and tiles I looked at were about a dollar per square foot. The deal I found was less than 50 cents a square foot. So yes save money by searching craigslist too.

Cooking with cast iron off the grid is always a great way to start the day and this morning was no different with a new recipe called a Power Pancake! This morning I ran out of bread so breakfast was getting switched up from french toast to a hearty Power Pancake made with granola and eggs! Normally I love a good breakfast to start the day with french toast but since I kept forgetting to buy some bread I decided to try a new recipe. If you are a fan of cast iron cooking this may already be part of your daily routine but for the rest of you cooking with an cast iron cooking power pancake 2old cast iron skillet can be a treat anytime. πŸ™‚ I like to add a particular special set of spices to my french toast including cinnamon and nutmeg which is amazing by the way! I use coconut oil instead of butter anytime I am using my cast iron because not only is it healthier but it also good for high temperature cooking (up to 425 degrees). This morning breakfast was getting flipped up for my new creation the Power Pancake and the flavor profile for this combination is phenomenal! Each morning off the grid is always a special one and the simple pleasures of cooking with a good old cast iron skillet for breakfast can really make your day!
